Quick and Easy Zucchini Feta Fritters

Tired of the same old zucchini bread? It’s time to shake things up in the kitchen with these crispy, flavorful zucchini fritters! Perfect for using up all of that zucchini from your garden that came ripe all at once, this recipe is quick, easy, and super satisfying. Bonus, once their cooked, they freeze well for later, so no guilt in potentially wasting all of what you grew.

Ingredients:

  • 3 zucchinis, grated

  • 1 cup crumbled feta

  • 1 cup bread crumbs

  • 2 eggs

  • Canola oil for frying

  • Dill dipping sauce (recipe below)

Instructions:

  1. Prep your zucchini: Grate the zucchinis and squeeze out excess water with paper towels. I leave mine to sit overnight in a bowl and simply drain it in the morning

  2. Combine ingredients: In a bowl, mix together grated zucchini, feta, bread crumbs, and the eggs (beaten) to form the fritter base.

  3. Cook: Heat canola oil in a skillet over medium heat. Drop spoonfuls of the mixture into the pan and cook until golden brown on both sides, about 3 minutes a side

  4. Serve: Enjoy your fritters hot with dill dipping sauce.

I use two large serving spoons to shape the fritters and drop them into the pan all in one fell swoop.

Dill Dipping Sauce:

  • Combine sour cream with chopped fresh dill to taste.
